As many of you know, I am not a big fan of cacao for kids! So I have put together a yummy treat that both the kids and adults can have! Im calling it my Carob Coconut slice, it is packed full of goodness.

These little slices are brain bood as it includes linseed’s ( omega’s 6&9) Coconut oil.  When you use coconut oil and linseed’s together it can help increases the conversion of short chain omega-3 to long chain omega-3 from 1-3% conversion up to 10% conversion.

Ingredients & Method

For the base:

  • 1 1/2 cups of walnuts
  • 1 cup of soaked dates
  • 1/4 cup of ground flax seeds
  • 1 tablespoon of mesquite powder
  • 2 tablespoons of carob ( or cacao)
  • 1 teaspoon of vanilla paste

Place all ingredients into your food processor and combine until crumb  like and sticky.Line your baking pan with baking paper and fill the first layer packing it down nice and tight.

For the centre

  • 2 cups of shredded coconut
  • 1/4 cup of goji berries
  • 1/3 cup of coconut oil ( melted)

Place all ingredients into your food processor and combine until sticky.
Pour over the first layer and press until firm.

Four the chocolate topping

  • 1/4 cup of carob powder
  • pinch of sea salt
  • 1/2 cup of coconut oil – melted
  • 2 drops of stevia ( you can leave this out) just use a teaspoon of honey

In a double boiler melt coconut oil and stir in carob and salt until smooth and well combined.
Pour over slice and into the freezer to set for one hour.

Once set you can store this yummy slice in the fridge – if it lasts that long:)
