Its Christmas time and who doesn’t love Christmas treats! So I have included a very yummy recipe below that we discovered last year from Russell James and it was a hit at Christmas last year- people are always amazed that raw food so can be so yummy! We have changed the recipe a bit so here is our version below:) enjoy Yummy Raw Christmas Fruit Pies

 

For the Crust

  • 2 cups cashews
  • 1 cup almonds or almond flour
  • 1/4 cup water
  • 3 tablespoons coconut nectar
  • 3 tablespoons lemon juice
  • a pinch of salt

Directions:

  • Grind all ingredients in a food processor until thoroughly mixed.
  • Press the mixture into a tart/muffin tray or silicone muffin molds that have been lined with coconut oil and dehydrate on a mesh dehydrator tray for 2–3 hours.
  • Remove the crusts from the cases and dehydrate out of the case for a further 8+ hours, still on the mesh dehydrator sheet.

For the filling

  • 1/2 a cup of medjool dates
  • Juice of one orange
  • 2 apples chopped
  • 1 cup of raisins chopped
  • 1 1/2 teaspoons mixed spice  (this is what makes it all so yummy)
  • a pinch of salt

Directions:

  • Blend all ingredients in your optimum blender except the apple and raisins until they form a paste
  • In a bowl add the chopped apple and raisins and stir still mixed  (this mixture is best left in the fridge for 6-8 hours to marinade)
  • Fill each of the cases with a little of the mixture then top with the cashew cream mixture (below) and a sprinkle of nutmeg.

For the Cream

  • 1 1/2 cups cashews ( soaked min 3 hours)
  • 1 tablespoon lemon juice
  • 3 tablespoons coconut oil
  • 1/4 cup of coconut nectar
  • a pinch of salt

Directions

  • Blend all ingredients in a Optimum blender until completely smooth.
  • Pour the cashew cream on your Christmas fruit mince pies or on enjoy the side.
